Pomegranate Autumn Fruit Salad

Pom Wonderful has created some fantastic recipes that are both healthy and delicious! Whether you are looking for something to liven up your daily meals or something special for your next dinner party, Pom Wonderful's Pomegranate Autumn Fruit Salad is sure to hit the spot!


60ml orange marmalade
30ml fresh lemon juice
60ml walnut oil
salt to taste
1 banana, peeled and diced
5g granulated sugar

Fruit Salad:
225g arils from 1-2 large POM Wonderful pomegranates
4 rings fresh pineapple,/2-inch thick, cut into chunks
2 persimmons, sliced
1 orange, sliced into segments
1 grapefruit, sliced into segments
50g seedless green grapes cut into half
30ml sour cream (optional)
40g ricotta cheese (optional)

Score 1-2 fresh pomegranates and place in a bowl of water. Break open the pomegranates under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 225g of the arils from fruit and set aside (Refrigerate or freeze the remainder for another use). Whisk together marmalade, lemon juice and walnut oil; salt to taste. Add banana and sugar; set aside. Arrange fruit slices on individual plates and sprinkle with arils. Spoon banana vinaigrette on top of fruit. If desired, mix ricotta cheese and sour cream; dollop mixture on each plate.
