The Perfect Pancake!




We have recently discovered the Pancake Pen from Wheel & Barrow ... It's a fantastic kitchen accessory to help create pancakes - from perfectly formed circles to fun shapes! To start you on your panckae odyssey, why not try this Coconut Pancakes Recipe, a healthy, flourless alternative.




Ingredients:
• 5 Eggs
• 1/2 Cup Almond meal
• 1/3 Cup Coconut flakes (dessicated coconut)
• 2 Tbspoons Coconut cream
• 1 Tbspoon Coconut oil (for frying)
• 1 Tbspoon Honey or maple syrup to serve

Method:

• Beat egg whites until stiff. Gradually add egg yolks, almond meal & coconut cream to the egg whites.

• Pour mixture into “Pancake Pen” then squeeze batter into pan & fry in coconut oil. Carefully turn the pancakes on each side until golden brown. Serve with a dollop of coconut cream, fresh cream or maple syrup & sprinkle with coconut flakes.

Note: Use Coconut oil as a healthy alternative. Unlike other frying oils coconut oil doesn't change its molecular properties when heated, this means fewer harmful fats. It also tastes great with this recipe.
