Tuna & Lemon Fettuccine

This tuna and lemon fettuccine is an easy and delicious recipe for mid-week fine dining!

Ingredients (serves 4)

1 lemon
2 (about 300g each) tuna steaks
1/3 cup (80ml) extra virgin olive oil
375g dried fettuccine
1 long fresh red chilli, seeded, thinly sliced
1 garlic clove, finely chopped
1 tbs salted baby capers, rinsed, drained
¼ cup (45g) toasted pine nuts
1 cup flat-leaf parsley leaves
50g baby rocket leaves

Method

1. Use a zester to remove rind from lemon. (Alternatively, use a vegetable peeler to peel rind from lemon. Use a small sharp knife to remove white pith from rind. Cut rind into very thin strips).
2. Season tuna with salt and pepper. Heat 1 teaspoon of the oil in a medium frying pan over high heat. Add the tuna and cook for 1 minute each side for medium rare or until cooked to your liking. Remove from heat and set aside for 2 minutes to rest. Use a sharp knife to thinly slice.
3. Meanwhile, cook the pasta in a large saucepan of salted boiling water, following packet directions until al dente. Drain well.
4. Heat the remaining oil in the pan over low heat. Add the chilli, garlic, capers and lemon rind and cook for 1 minute. Remove from heat. Add the pasta, pine nuts, parsley and rocket and gently toss to combine. Divide evenly among serving plates. Top with tuna and serve immediately.

Do you have any organisation goals on your New Year’s resolutions list? Achieve your goals by breaking them down in to easy-to-complete steps, and focus on small parts of the overall projects. If you’re looking to conquer clutter room by room check out Better Homes & Gardens great advice.

Keep only things that really matter to you, that you use, and that you have room for. Ask a trusted friend to help you go through memorabilia. It's easy to get lost in the past while reading old letters or looking through old photos, but a friend will keep you on track. Dealing with sorted piles makes it easier to make decisions. Be kind to yourself and give yourself more time to tackle objects that have feelings attached to them. But don't let grief or guilt bully you into keeping things you don't really need. Keep only a few strong sentimental reminders.

Play beat the clock and schedule 15 to 30 minutes of daily catch-up time and see how many organisational tasks (sorting the mail, reorganising a cupboard, putting laundry away) you can complete. Knowing that an end is in sight will make it easier for you to get going. Sound an alert. If time is always getting away from you, set an alarm to remind you to do a specific organisational task. Make time fly and multitask - minutes will pass more quickly if you do a task while watching TV, listening to music, or conversing with a spouse, child, or friend.

Use a "transfer basket" to gather everything that needs to go out the door the next day - library books, bills to mail, schoolwork, etc. Haul the basket to your car every morning and bring it back into the house when errands are done.

You can't hide all clutter, but you can contain it. Look at where it collects and set up attractive ways to deal with it. Place a large bowl on the kitchen counter to collect keys. Leave a big basket by the door for shoes. Check discount stores and office supply houses for patterned folders for storing bills or wicker, fabric, and leather boxes to match your décor.

Why not make these edible place settings for Christmas lunch or dinner? These ones are so easy to make and your guests will love them!

Equipment
You'll need 5.5cm, 7cm and 9cm star-shaped cookie cutters

Ingredients (makes 6)
1 quantity Basic biscuit dough ingredients (see related recipes)
200g white chocolate, melted
1/3 cup icing sugar
1 to 2 teaspoons water
icing sugar, to serve

Method
1. Follow steps 1 to 3 of Basic biscuit recipe. Cut out 18 x 9cm stars, 18 x 7cm stars and 18 x 5.5cm stars from dough. Place onto prepared trays. Refrigerate for 15 minutes or until firm. Bake for 15 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool.
2. Place a 9cm star onto a flat surface. Spoon a little melted chocolate onto centre of star. Top with a second 9cm star, turning top star slightly so it is at an angle to first star. Repeat with a third 9cm star. Repeat with 3 x 7cm stars then with 3 x 5.5cm stars.
3. Combine icing sugar and enough water to make a thick paste. Drop a spoonful onto top of each tree. Use to hold place setting cards in position. Allow to set completely. Before placing onto table, dust with icing sugar.

Notes
These trees can be made up to a week in advance. Store in a large airtight container in a cool place. Dust with icing sugar just before placing onto table. They make a great gift idea. After dinner wrap them in clear cellophane and give to your guests to take home.

Fruit Mince Pies

Everyone's faces will light up when they see these fruit mince pies this Christmas.

Ingredients (makes 24)
410g jar fruit mince
1/2 cup dried cranberries
1 small granny smith apple, peeled, grated
1/4 cup raspberry jam
2 teaspoons MasterFoods vanillin sugar
185g butter, chilled, chopped
1/3 cup icing sugar mixture
2 teaspoons finely grated orange rind
2 1/4 cups plain flour
1 egg yolk
2 tablespoons iced water
icing sugar mixture, to dust

Method
1. Combine fruit mince, cranberries, apple, jam and vanillin sugar in a bowl. Set aside.
2. Process butter, icing sugar, orange rind and flour until mixture resembles breadcrumbs. Add yolk and 1 tablespoon iced water. Process until dough forms, adding more iced water if necessary. Divide dough in half. Shape halves into discs. Cover. Refrigerate for 30 minutes.
3. Preheat oven to 180°C/160°C fan-forced. Grease two 12-hole 1 1/2 tablespoon-capacity round-based patty pans. Roll 1 pastry disc between 2 sheets of baking paper until 3mm thick. Using a 7cm round cutter, cut 24 rounds from dough, re-rolling dough scraps. Press rounds into holes of prepared pans. Using a fork, prick pastry cases.
4. Bake for 10 to 15 minutes or until light golden. Cool in pans. Roll remaining pastry disc between 2 sheets of baking paper until 3mm thick. Using a 4.5cm star-shaped cutter, cut 24 stars from dough, re-rolling dough scraps. Spoon fruit mince mixture into pastry cases, pressing down with back of spoon. Top with stars, pressing edges to seal.
5. Bake for 10 to 12 minutes or until golden. Stand in pans for 5 minutes. Transfer to a wire rack to cool. Dust with sugar. Serve.

Satay chicken rice paper rolls

If you hosting a dinner party this weekend you can forget the party pies. These fabulous chicken rice paper rolls will delight even the fussiest of guests.

Ingredients (makes 20)
1 drinking coconut (see note)
700g chicken breasts
1 stalk lemongrass, chopped
20 x 22cm rice paper wrappers (see note)
1/2 small iceberg lettuce, thinly shredded
1 cup Thai basil leaves
1/2 cup coriander leaves
Lime wedges, to serve

Satay sauce
1 tbs vegetable oil
1 eschalot, finely chopped
1 clove garlic, finely chopped
1 red bird's-eye chilli, seeded, finely chopped
1/2 tsp each ground cumin, coriander and turmeric
250ml (1 cup) chicken stock
80ml (1/3 cup) coconut milk
2 tbs hoisin sauce
1 1/2 tbs fish sauce
140g (1 cup) roasted unsalted peanuts
1 tbs grated palm sugar
1 lime, juiced

Method

1. To cook chicken, place coconut on a work surface. Using the heel of a cleaver, make a 5cm hole in top. Pour coconut water into a small frying pan. Crack coconut open. Scoop out flesh, finely chop, then reserve. Add chicken and lemongrass to pan with enough tap water to just cover. Bring to a simmer over high heat, reduce heat to low, then cook for 10 minutes. Remove from heat. Set aside for 10 minutes (the residual heat of the water will finish cooking chicken).
2. Meanwhile, to make sauce, heat oil in a small saucepan over medium heat. Add eschalot, garlic and chilli, and cook, stirring, for 3 minutes or until soft. Add spices and stir for 1 minute or until fragrant. Stir in stock, coconut milk and hoisin and fish sauces, then bring to a simmer. Reduce heat to low and cook for 10 minutes or until slightly reduced.
3. Process peanuts and palm sugar in a food processor until finely ground. Add to coconut milk mixture. Simmer, stirring occasionally, for a further 5 minutes or until sauce is thick. Stir in lime juice. Cool. Makes 1 1/4 cups.
4. Remove chicken from cooking liquid and cool. Finely shred chicken into a bowl. Add reserved coconut flesh.
5. Fill a large bowl with warm water. Dip a rice paper wrapper in water for 20 seconds or until just softened, then place on a sheet of baking paper. Fold left side in by 5cm, then place some lettuce lengthwise on wrapper, 3cm up from the bottom. Top with a little chicken mixture and sauce, then a basil and coriander leaf. Fold bottom of wrapper up over filling, then roll up tightly, folding in right side as you go, to form a roll with one open end. Repeat with remaining wrappers and filling ingredients. Tuck a few extra herbs into the top of each roll.
6. Serve rolls with lime wedges and remaining satay sauce.

Notes

Drinking coconut, also known as young coconut, is sold with the green outer shell removed. Available, along with rice paper wrappers, from supermarkets.

Ingredients (makes 15)
Melted butter, to grease

1/2 cup plain flour

1/4 cup cocoa powder

3/4 cup caster sugar
2 eggs
125g butter, melted
150g pink and white marshmallows, halved
50g slivered almonds
100g salted pistachio kernels
50g banana lollies, coarsely chopped

3/4 cup Kellogg’s Coco Pops
100g glacé cherries, halved

1/3 cup shredded coconut
200g milk chocolate, melted
100g 70% cocoa dark chocolate, melted

Method
1. Preheat oven to 180ºC. Brush a 20 x 30cm slab pan with melted butter. Line the base and 2 long sides with non-stick baking paper, allowing the sides to overhang.
2. Sift the flour and cocoa powder into a bowl. Stir in the sugar. Make a well in the centre. Add eggs and butter. Stir to combine. Pour the mixture into the prepared pan. Bake for 20-25 minutes. Set aside in the pan to cool completely.
3. Combine the marshmallow, almonds, pistachios, banana lollies, Coco Pops, cherry and coconut in a bowl. Add the combined chocolate and stir to combine. Spoon mixture over the cake. Tap pan on the bench to settle the mixture. Set aside to set completely. Cut into squares to serve.

Make these beautiful treats as Christmas food gifts for friends and family, or give into temptation and keep them for yourself!

Rum balls make wonderful food gifts. They are super easy to make and this chocolate fruitcake rum balls recipe is particularly great as it uses all that Christmas fruit cake.

Ingredients (makes 55)
800g dark fruitcake
1/3 cup (80ml) dark rum
3 x 180g blocks good-quality dark chocolate, chopped
1 cup chocolate sprinkles
2 cups desiccated coconut
2 cups crushed Digestive biscuits

Method
1. Line 2 large trays with baking paper. Crumble fruitcake into a large bowl. Drizzle with rum. Mix.

2. Place chocolate in a microwave-safe bowl. Microwave on medium-high (75%) for 1 minute 30 seconds to 2 minutes, stirring with metal spoon every 30 seconds, or until smooth. Add melted chocolate to fruitcake mixture. Mix well to combine.
3. Working quickly, roll 1 level tablespoon of fruitcake mixture into a ball. Toss in sprinkles, coconut or biscuits (see note). Place on prepared tray. Repeat with remaining fruitcake mixture and sprinkles.
4. Refrigerate for 1 hour or until firm. Serve.

Buttery, lightly golden and impossibly moreish, this traditional shortbread will delight loved ones at Christmas time.

Ingredients (makes 2)
250g butter, softened
3/4 cup (155g) caster sugar
1 teaspoon vanilla extract
2 cups (300g) plain flour, sifted
1/2 cup (90g) rice flour, sifted

Method
1. Preheat oven to 160°C. Grease 2 oven trays. Line with baking paper. Using an electric mixer, beat butter, 2/3 cup sugar and vanilla until light and fluffy. Stir in sifted flours.
2. Divide dough into 2 portions. Shape into 2 discs. Roll 1 portion between 2 sheets of baking paper to form a 20cm round. Carefully transfer to prepared tray. Repeat with remaining dough.
3. Using a small knife, score each round into 8 wedges, being careful not to cut all the way through. Pinch edges of rounds to form a scalloped effect. Prick top of rounds with a fork. Sprinkle with remaining sugar.
4. Bake for 20 minutes or until golden, swapping the trays halfway through cooking. Cool on the trays and then serve.

Ingredients (makes 20)
250g pkt Arnott’s Butternut
Snap Cookies
200g white chocolate, chopped
15g (1/3 cup) Rice Bubbles
25g (1/3 cup) shredded coconut
1/3 cup mini pink and white marshmallows, halved

Method
1. Preheat oven to 180°C. Place 1 biscuit over each hole of a 12-hole, 1 1/2-tablespoon capacity shallow patty pan. Bake for 2-3 minutes or until soft. Use a lime or a small ladle to carefully press softened biscuits into pan to mould into a cup shape. Set aside to cool. Transfer to a serving plate. Repeat with remaining biscuits.
2. Place the chocolate in a microwave-safe bowl. Cook for 2 minutes on Medium/500watts/50%, stirring every 30 seconds, or until chocolate melts and is smooth.
3. Add the Rice Bubbles, coconut and marshmallow and stir to combine. Divide the mixture among biscuit cases. Place in the fridge for 20 minutes or until set.

Lavender: Use culinary lavender (English is best). Shred the flower. Put some ice-cream in a cone or bowl, sprinkle with a few lavender flowers and a drizzle of honey or use some when baking cakes.

Marigold: Comes in a range of sunny colours and will brighten up any meal. The taste can be a bit spicy for young children, so introduce them sparingly. The petals can be used in salads or sprinkled over soup and rice and pasta dishes.

Nasturtium: These flowers are crammed with vitamin C. They can be eaten whole, used in salads or as a garnish. They have a delicious sweet and slightly spicy flavour.

Rosemary: Its flowers can be used in casseroles or as a garnish over meat. You can also create barbecue skewers by cutting 15cm-long stems and stripping the foliage. Soak in water and then use to make kebabs.

Rose: Interestingly, the flavour of the petals alters (just like the perfume) depending on the type and colour of the flower. They are delicious used in jellies and syrups.

Sage: The bright red flowers of the fragrant pineapple sage are delicious sprinkled over fresh pineapple and ice-cream.

Violas and Pansies: With your child, collect a dozen or so flowers. Pop them into an ice-cube tray and fill with water. Freeze. Your child will love them with their favourite drink.

Zucchini: Stuffed with cheese and herbs, then deep-fried, these flowers are a great delicacy in Italian cuisine.

Leek, Bacon, Brie & Mustard Quiche

Ingredients (serves 6)
1 quantity shortcrust pastry
Plain flour, to dust
40g butter
1 leek, pale section only, washed, dried, thinly sliced
4 bacon rashers, excess fat trimmed, finely chopped
2 tbs wholegrain mustard
150g brie, thinly sliced
3 eggs, lightly whisked
80ml (1/3 cup) thickened cream
Salt & freshly ground black pepper

Method
1. Make pastry following the recipe above to the end of step 4. Roll out pastry on a lightly floured surface to a 15 x 40cm rectangle, about 3mm thick. Line a shallow 10 x 34cm (base measurement) fluted tart tin, with removable base, with pastry and trim any excess. Place in the fridge for 30 minutes to rest.
2. Meanwhile, preheat oven to 200°C. Melt the butter in a large frying pan over medium heat until foaming. Add the leek and bacon and cook, stirring, for 5 minutes or until leek softens. Remove from heat.
3. Cover pastry base with baking paper and fill with pastry weights, rice or dried beans. Bake in oven for 10 minutes. Remove paper and weights, rice or beans. Bake for a further 8 minutes or until golden. Remove from oven and reduce oven temperature to 160°C.
4. Spread mustard over pastry base. Top with the leek mixture and brie slices. Whisk the eggs and cream together in a bowl. Season with salt and pepper. Pour the egg mixture into the pastry case.
5. Bake in oven for 25-30 minutes or until just set. Serve warm.

Ingredients (serves 4)
500g butternut pumpkin, peeled, deseeded, cut into 2cm pieces
1 fennel bulb, ends trimmed, thinly sliced
2 green zucchini, ends trimmed, thickly sliced
1 red onion, halved, cut into wedges
2 tbs olive oil
1 x 125g pkt 98 per cent fat-free bacon (Weight Watchers brand), cut into thin strips
200g dried penne pasta
1/3 cup loosely packed fresh basil leaves
80g shaved parmesan (Mil Lel brand)

Method
1. Preheat oven to 230°C. Line 2 baking trays with non-stick baking paper. Place pumpkin and fennel on 1 tray. Place the zucchini and onion on another tray. Brush with the oil. Place fennel and pumpkin on top shelf of preheated oven and zucchini and onion on bottom shelf. Bake for 10 minutes or until tender. Sprinkle pumpkin and fennel with bacon and bake for a further 10 minutes or until brown. Remove from oven.
2. Meanwhile, cook pasta in a saucepan of salted boiling water following packet directions or until al dente. Drain. Return to pan.
3. Add the vegetable mixture and basil, and toss to combine. Divide among serving bowls. Sprinkle with parmesan to serve.

Ingredients (serves 4)
1 bunch English spinach, trimmed
1 tablespoon olive oil
4 green onions, thinly sliced
2 garlic cloves, crushed
1 tablespoon chopped fresh dill
100g feta cheese, crumbled
1/2 cup grated tasty cheese
4 eggs
1/2 cup self-raising flour
1 1/2 cups milk
Mixed salad, to serve

Method
1. Preheat oven to 200°C/180°C fan-forced. Lightly grease a 4 cup-capacity, 23cm (base) pie dish. Place on a baking tray. Wash spinach. Pat dry with paper towel. Roughly chop. Heat 1 teaspoon oil in a large deep frying pan over medium heat. Add spinach. Cook, stirring, for 2 minutes or until wilted. Transfer to a plate. Cool for 20 minutes.
2. Heat remaining oil in pan over medium heat. Add onion. Cook for 1 minute or until softened. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Transfer to a bowl.
3. Place spinach in a sieve. Using the back of a large spoon, press liquid from spinach. Add spinach, dill, feta and tasty cheese to onion mixture. Stir to combine. Spoon over base of prepared dish.
4. Whisk eggs and flour together in a jug (mixture will be a little bit lumpy). Gradually add milk, whisking to combine. Pour egg mixture over spinach mixture. Bake for 30 to 35 minutes or until risen, lightly browned and set. Cut into wedges. Serve with salad.

Zucchini & Feta Filo Roll with Pumpkin Mash

Ingredients (serves 4)
1 tbs olive oil
3 yellow squash, coarsely chopped
1 large green zucchini, coarsely chopped
2 garlic cloves, crushed
350g fresh ricotta
1/4 cup chopped fresh continental parsley
200g reduced-fat feta, crumbled
2 tsp chopped fresh rosemary
6 sheets filo pastry
Olive oil spray
30g (1/3 cup) dried (packaged) breadcrumbs
10g butter, melted
750g butternut pumpkin, peeled, de-seeded, coarsely chopped
95g (1/3 cup) basil pesto

Method
1. Preheat oven to 220°C. Line a baking tray with non-stick baking paper.
2. Heat the oil in a large frying pan over medium-high heat. Add the squash, zucchini and garlic and cook, stirring, for 3-4 minutes or until squash is just tender.
3. Combine the ricotta, parsley, three-quarters of the feta, and 1 teaspoon of rosemary in a bowl. Stir in the zucchini mixture. Season with salt and pepper.
4. Place filo on a clean work surface. Cover with a dry tea towel, then a damp tea towel (this will prevent it drying out). Spray 1 filo sheet with olive oil spray. Top with another filo sheet. Spray with olive oil spray. Repeat with remaining filo and olive oil spray. Sprinkle with the breadcrumbs. Place the filling along 1 long side, leaving a 6cm-wide border at each end. Fold in ends and roll up firmly. Place on the lined tray. Brush with butter. Bake for 15 minutes or until golden.
5. Meanwhile, cook the pumpkin in a saucepan of boiling water for 10 minutes or until tender. Drain. Return to pan. Use a potato masher to mash until smooth. Stir in the remaining feta and rosemary.

6. Thickly slice the filo roll. Divide mash among serving plates. Top with the filo roll. Drizzle over the pesto to serve.

Variations

Pumpkin & ricotta gnocchi bake

Omit the squash, zucchini, parsley, feta, filo and breadcrumbs. Preheat oven to 200°C. Heat the oil and butter in a frying pan over medium-high heat. Add the garlic, rosemary, pumpkin and 200g short-cut bacon rashers, coarsely chopped. Cook, stirring, for 5 minutes. Stir in the pesto, 1 x 500g pkt potato gnocchi, 250ml (1 cup) passata (tomato pasta sauce) and 125ml (1/2 cup) water. Transfer to a 2.5L (10-cup) capacity ovenproof dish. Top with the ricotta and 35g (1/3 cup) coarsely grated cheddar. Bake for 20 minutes or until golden. Serve.

Salami, zucchini & mushroom

Omit the ricotta, filo, breadcrumbs and pumpkin. Preheat oven to 220°C. Add 300g button mushrooms, quartered, and 200g salami, coarsely chopped, to the pan in step 2. Coarsely chop 1 x 400g loaf crusty bread. Scatter half the bread over the base of an ovenproof dish. Top with half the salami mixture. Sprinkle with 40g (1/2 cup) coarsely grated cheddar. Repeat with the remaining bread and salami mixture. Top with 40g (1/2 cup) coarsely grated cheddar. Whisk together 750ml (3 cups) milk, 3 eggs and 2 tbs Dijon mustard. Pour over the strata. Bake in oven for 20 minutes. Serve.

Zucchini & feta clafouti

Omit the ricotta, filo, breadcrumbs and pumpkin. Preheat oven to 220°C. Heat a frying pan over medium-high heat. Add the squash, zucchini, garlic and 1 x 250g punnet cherry tomatoes, halved, and cook, stirring, for 5 minutes.Transfer to a 1.5L (6-cup) capacity ovenproof dish. Place 40g (1/4 cup) self-raising flour in a bowl. Whisk together 375ml (1 1/2 cups) milk, 125g (1/2 cup) sour cream and 2 eggs in a jug. Gradually add to flour, whisking until smooth. Pour batter over the vegetables and top with feta. Bake for 20 minutes or until set. Serve.

Ingredients (serves 6)
Olive oil, to grease
2 medium (about 300g) beetroots
480g orange sweet potato (kumara), peeled, thinly sliced
400g kent pumpkin, deseeded, peeled, thinly sliced crossways
2 parsnips, peeled, thinly sliced
1 fennel bulb, thinly sliced lengthways
1 large (about 200g) carrot, peeled, thinly sliced
1 large brown onion, halved, thinly sliced
3 large garlic cloves, thinly sliced
1/2 cup loosely packed chopped fresh mixed herbs (such as parsley, thyme and oregano)
125ml (1/2 cup) reduced-fat thickened cream

Method
1. Preheat oven to 160°C. Brush a 3L (12 cup) capacity ovenproof dish with oil to grease. Wearing rubber gloves to avoid staining your hands, trim, peel and thinly slice beetroot.
2. Layer the sweet potato, pumpkin, beetroot, parsnip, fennel, carrot and onion with the garlic and herbs in the prepared dish, drizzling each layer with a little of the cream. Top with another drizzle of cream.
3. Roast, uncovered, in preheated oven for 1 1/4 hours or until vegetables are golden brown and tender when tested with a small sharp knife. Serve immediately.

700g butternut pumpkin, peeled, cut into 2cm cubes
2 pinches chilli flakes
1/2 teaspoon coriander seeds, crushed
Olive oil cooking spray
625g fresh ricotta and spinach agnolotti pasta
80g butter, chopped
1/2 cup fresh sage leaves
1/3 cup chopped walnuts
Shaved parmesan cheese, to serve

Method
1. Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Place pumpkin in a bowl. Add chilli and coriander. Spray with oil. Stir to combine. Arrange pumpkin, in a single layer, on baking tray. Roast for 20 to 25 minutes or until golden and tender.
2. Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain, reserving 1/4 cup cooking liquid. Return pasta to pan.
3. Meanwhile, melt butter in a frying pan over medium heat. Cook sage and walnut for 3 to 5 minutes or until butter is golden and sage crisp.
4. Add pumpkin, sage mixture and reserved cooking liquid to pasta. Season with salt and pepper. Toss over low heat until combined and heated through. Serve topped with parmesan.

Eating a few Brazil nuts every day will supply you with a good dose of the antioxidant selenium, which is needed for tissue elasticity. It also helps reduce cell damage from free radicals. Other good sources of selenium include wheat germ, salmon, eggs, garlic and wholegrains.

Saturday

Go bananas! They are a great source of vitamin C and contain the trace mineral silica, which is essential for healthy skin. The body uses it to make the connective tissue collagen. Other food sources of silica include kelp, whole oats, buckwheat, brown rice, green leafy vegies and alfalfa.

Sunday

Munch on carrots. They are packed with beta-carotene, a precursor to vitamin A, which helps to promote the skin’s repair and maintenance. A deficiency in vitamin A usually results in dry skin. Other foods that are high in vitamin A that you can try include liver, spinach, chilli, sweet potatoes and apricots.

Warm Chicken Schnitzel Salad

Try your hand at this delicous warm chicken schnitzel salad with pink lady apples, pumpkin and blue cheese. Its sure to be a winner at the dinner table.

Ingredients

For the pumpkin:
½ small butternut pumpkin, peeled, seeded and sliced into 1cm thick wedges
1 tbsp olive oil
1 sprig fresh thyme

For the chicken:
2 cups dried breadcrumbs
1/3 cup continental parsley leaves, roughly chopped
4 chicken breasts (160g each), pounded to 1cm with a meat mallet
½ cup plain flour
3 free range eggs, lightly beaten
¼ cup olive oil

For the vinaigrette:
2 tbsp apple cider vinegar
1 tsp Australian Pure honey
3 tbsp olive oil

For the salad:
1 Pink Lady apple, cored, cut into quarters and thinly sliced
3 tbsp continental parsley leaves
2 celery stalks, cut into 3mm thick strips on an angle
1 small head red fancy lettuce, leaves separated and torn into large pieces
½ cup crumbled blue cheese
¼ cup toasted walnuts

Method

1. Preheat oven to 240˚C, toss pumpkin with the tablespoon of olive oil and thyme and season with salt and pepper. Place onto a tray and in the oven for 15 minutes or until caramelised and tender. Remove from oven and let cool slightly.

2. While pumpkin is cooking, mix the breadcrumbs with the chopped parsley in a medium mixing bowl. Season the flattened chicken with salt and pepper on both sides and lightly coat in flour. Shake off any excess.

3. Dip chicken in the egg allowing any excess to drip off, then coat the chicken evenly with the breadcrumbs. If there are any breadcrumbs left over after the first coat, press the chicken fillets into the crumbs a second time for a thicker crust.

4. In a large frying pan heat 2 tablespoons of oil over medium-high heat and cook chicken in two batches for 2-3 minutes per side or until golden brown and cooked through, adding more oil as needed.

5. Remove chicken from the pan to a baking tray and place in warm oven while preparing salad.

6. In a medium mixing bowl whisk together the vinegar and honey. While whisking slowly add the 3 tablespoons of oil in a thin stream and season to taste with salt and pepper.

7. In a large mixing bowl, gently toss the apples, parsley, celery, and salad leaves with enough vinaigrette to coat and season to taste with salt and pepper.

8. Slice each breast into strips and place chicken on top of each salad, drizzle with any remaining vinaigrette and serve immediately. Mound the salad onto serving plates and top with the pumpkin, blue cheese and walnuts.

Pumpkin & Spinach Salad

Ingredients (serves 6)
600g butternut pumpkin, deseeded, peeled, cut into wedges
2 tsp olive oil
2 tsp honey
2 tsp sesame seeds
1 tbs fresh lemon juice
1 tbs honey, extra
2 tbs extra virgin olive oil
2 tsp wholegrain mustard
1 x 150g pkt baby spinach leaves
1 x 75g pkt toasted pine nuts

Method
1. Preheat oven to 220°C. Line a baking tray with non-stick baking paper. Place the pumpkin in a large bowl. Drizzle with oil and honey. Season with salt and pepper. Gently toss until the pumpkin is well coated. Place in a single layer on the lined tray. Bake, turning once during cooking, for 25 minutes or until golden brown. Remove from oven and sprinkle evenly with the sesame seeds. Return to oven and bake for 5 minutes or until the seeds are lightly toasted. Remove from oven and set aside for 30 minutes to cool.
2. Combine the lemon juice, extra virgin olive oil, mustard and extra honey in a screw-top jar and shake until well combined. Season with salt and pepper.
3. Place the pumpkin, spinach and pine nuts in a large bowl. Drizzle with the dressing and gently toss until just combined. Serve immediately.

Traditional Caesar salad

Ingredients (serves 6)
200g sourdough baguette, cut into 1cm cubes
olive oil cooking spray
6 rashers rindless bacon, chopped
1 large cos lettuce
50g parmesan cheese, shaved

Caesar dressing
2 egg yolks
2 teaspoons Dijon mustard
1 large garlic clove, chopped
4 anchovies, chopped
1 tablespoon red wine vinegar
3/4 cup olive oil

Method
1. Make Caesar dressing Place egg yolks, mustard, garlic, anchovy and vinegar in a food processor and process until smooth. With the motor running, slowly add oil until dressing thickens. Season with salt and pepper. Cover and refrigerate until ready to serve.
2. Preheat oven to 200°C. Arrange bread on a large, flat baking tray. Spray with oil and season with salt and pepper. Toss bread pieces gently to coat, spraying with more oil if necessary. Bake for 8 to 10 minutes or until light golden. Set aside to cool completely.
3. Meanwhile, heat a non-stick frying pan over medium heat. Add bacon. Cook, stirring, for 3 to 4 minutes or until bacon is crisp and golden. Drain on paper towel.
4. Tear lettuce leaves into 3cm pieces and place in a large bowl. Add bacon and croutons. Pour dressing over salad. Season with salt and pepper. Toss gently to combine. Top with parmesan. Serve.

Warm chicken and lentil salad

Ingredients (serves 4)
1 1/2 tablespoons olive oil
1 brown onion, chopped
1 garlic clove, crushed
2 x 400g cans brown lentils, drained, rinsed
1 tablespoon red wine vinegar
80g baby spinach leaves
650g chicken breast fillets, trimmed
1/2 cup reduced-fat tzatziki dip, to serve

Method
1. Heat 2 teaspoons of oil in a non-stick frying pan over medium heat. Add onion. Cook, stirring, for 2 to 3 minutes or until tender. Add garlic and cook for 1 minute. Add lentils and red wine vinegar. Cook, stirring, for 1 to 2 minutes or until lentils are heated through. Transfer to a large bowl. Stir in spinach. Season with pepper.
2. Wipe frying pan clean with paper towel. Add remaining oil to the pan. Heat over medium-high heat. Add chicken. Reduce heat to medium. Cook for 3 to 4 minutes each side or until just cooked through. Transfer to a board. Stand for 3 minutes.
3. Thickly slice chicken. Add to lentil mixture and toss to combine. Spoon salad into serving bowls. Serve with tzatziki.

Asian greens with chicken and crispy noodle salad

Ingredients (serves 4)
4 single chicken breast fillets
2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
1 bunch baby pak choy, leaves separated, finely shredded
110g (2 cups) trimmed bean sprouts
1 bunch fresh coriander, leaves picked
1 bunch fresh mint, leaves picked
125ml (1/2 cup) sweet chilli sauce
2 tbs fresh lime juice
1 x 100g pkt Chang's Crunchy Noodles

Method
1. Bring a large deep frying pan of water to the boil over high heat. Add the chicken and reduce heat to medium-low. Simmer for 10 minutes or until cooked through. Drain. Transfer to a plate. Set aside for 10 minutes to cool slightly.
2. Meanwhile, combine the cucumber, baby pak choy, bean sprouts, coriander and mint in a large bowl. Whisk together the sweet chilli sauce and lime juice in a small jug.
3. Finely shred the chicken. Add the chicken and noodles to the cucumber mixture. Drizzle the dressing over the salad and toss until well combined. Serve immediately.

Preparation Time 15 minutes
Cooking Time 35 minutes

Ingredients (serves 6)
1 bunch of English spinach, ends trimmed, washed, with water clinging to leaves
45g (1/4 cup) pine nuts
1 tbs olive oil
1 brown onion, halved, finely chopped
1 garlic clove, crushed
480g (2 cups) fresh ricotta
Pinch of ground nutmeg
12 crepes (see related recipe)
375ml (1 1/2 cups) passata (tomato pasta sauce)
80g (1 cup) coarsely grated cheddar
Mixed salad leaves, to serve

Method
1. Preheat oven to 180°C. Place the spinach in a large saucepan over medium heat. Cook, covered, stirring occasionally, for 3-4 minutes or until wilted. Drain well. Set aside for 5 minutes to cool. Use your hands to squeeze any excess moisture from the spinach. Coarsely chop and place in a large bowl.
2. Heat a medium frying pan over high heat. Add the pine nuts and cook, stirring, for 1-2 minutes or until toasted. Add to the bowl with the spinach.
3. Add the oil to the same pan and heat over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5 minutes or until the onion softens. Transfer to the bowl with the spinach mixture. Add the ricotta and nutmeg and stir until well combined. Season with salt and pepper.
4. Place 1 crepe on a clean work surface. Divide the spinach mixture into 12 equal portions. Spoon 1 portion of spinach mixture down the centre of the crepe. Roll up firmly to enclose filling. Place in a large ovenproof baking dish. Repeat with remaining crepes and spinach mixture, placing the crepes side by side in the baking dish. Spoon the passata over the crepes and sprinkle with cheddar.
5. Bake in oven for 20 minutes or until the cheese melts and crepes are heated through. Serve with mixed salad leaves.

Haloumi, Lentil & Rocket Salad

Preparation Time 10 minutes
Cooking Time 10 minutes

Ingredients (serves 4)
1 x 400g can brown lentils, rinsed, drained
1 x 250g punnet grape tomatoes, halved
2 Lebanese cucumbers, ends trimmed, halved lengthways, thinly sliced
60g baby rocket leaves
1/2 small red onion, finely chopped
1 tbs fresh lemon juice
1/2 tsp caster sugar
2 1/2 tbs olive oil
1 x 180g pkt haloumi, cut into 8 slices

Method
1. Combine the lentils, tomato, cucumber, rocket and onion in a large bowl.
2. Place the lemon juice, sugar and 2 tablespoons of oil in a small bowl. Season with salt and pepper. Whisk to combine.
3. Pat the haloumi dry with paper towel and brush with the remaining oil. Heat a medium frying pan over medium heat. Add half the haloumi and cook for 1-2 minutes each side or until golden. Transfer to a plate. Repeat with remaining haloumi, reheating the pan between batches.
4. Drizzle the dressing over the salad and toss to coat. Divide the salad among serving plates. Top with the haloumi to serve.

Notes
Swap it: Swap the haloumi for 4 chicken breast schnitzels. Marinate the chicken in extra lemon juice and olive oil. Cook for 3 minutes each side.

How to spring clean your garden

Make the most of your spring gardening urges by whipping your garden back into shape after winter and preparing it for a hot, dry summer ahead. This is a great time to start a vegetable garden, establish new garden beds, plant just about anything, renovate your lawn, spruce up neglected areas and to give the garden its once-a-year feed of fertiliser. HomeLife have given us their 10 top tips for ways to direct your spring gardening urges to get the most from your garden. Make a start this weekend and follow the rest of the action plan over the weeks ahead!

1. Feed

Early spring is the best time of the year to give everything in the garden a good dose of fertiliser. After the next fall of rain, scatter slow-release or pelletised fertiliser over your garden. As it breaks down and filters into the soil, it is absorbed by growing roots and used to fuel growth and flowering.

2. Lawn update

Apply a slow-release complete lawn food to all grass areas. Use a metal rake to remove any build up of thatch (dead growth giving lawns a spongy feel underfoot). If the lawn is looking sparse, reseed or returf bare areas. Before replanting, dig in organic matter and water over the area with a soil wetting agent. Keep everyone off areas that are being renovated until the new grass is growing vigorously.

3. Plant vegetables
Early spring is a rewarding time to plant vegetables, whether you’re starting a new garden or popping some herbs in a sunny window box. Vegies and herbs to plant now (or after the last frosts in frost-prone areas) include summer salad vegies such as tomato, snowpeas, capsicum or chilli, lettuce, cucumber, basil, rocket and parsley.

4. Quick colour

Add instant colour with pots of cineraria, pansy, polyanthus or flowering bulbs such as daffodils and tulips. Also plan ahead for flowers later in the year. Buy punnets of late spring and summer flowers including petunia, phlox and impatiens (a good choice for shade). Seedlings can be planted in garden beds or popped into large pots for strategic bursts of colour.

5. Plant just about anything

Remove plants that have died or are past their best, or extend your garden to accommodate new plantings. Prepare for new plantings by clearing grass and weeds, then digging organic matter into the soil. When working out where to place a new plant take into account the amount of space that’s needed as it grows both across and up (see plant labels for information on plant size).

6. Clean and mend
Warmer weather means more time spent outside eating, relaxing and entertaining. Check outdoor furniture and outdoor sitting areas in preparation for convivial times ahead. Wooden furniture may need to be repainted or re-oiled. Nuts and bolts should be checked and tightened. Canvas chairs may need to be cleaned or re-covered. Also, clean the barbecue and replenish gas bottles. Paving and other hard surfaces benefit from a vigorous sweep to remove accumulated leaves and dirt. Mossy or slippery paths can be cleaned and treated with a once-a-year product.

7. Re-pot
All container-grown plants, including indoor plants, which have been in the same pot for several years, or that have outgrown their current pot, can be re-potted now. Place plants into slightly larger pots with fresh potting mix or trim roots and replant into the old pot but with fresh potting mix. If you only have a few pots, buy a bag or two of potting mix. If you have a large number of pots, buy a load of premium potting mix from a landscape supplier to save time and money

8. Prune
Plants that have already bloomed or have frost damage can be pruned to encourage new growth. Also remove old canes from perennials and grasses to make way for fresh spring growth. To keep shrubs, perennials and annuals in bloom over the months ahead, remove spent flowers regularly.

9. Top up mulch
A quick way to spruce up the garden, cut weeds and save water at the same time is with a load of organic mulch. Remove weeds and encroaching grass from under trees and throughout garden beds and then spread mulch over exposed soil to a depth of about 5cm thick (for more advice on how to mulch, see ‘What to do this week’).

10. Water features
Top up water features and clean out ponds by removing accumulated leaves and rubbish that’s blown in over winter. Remove dead stalks from pond plants and scoop out algae. Re-pot water plants such as waterlilies before returning them to ponds.

Ingredients (makes 32)
185g butter, softened
1/3 cup caster sugar
1/3 cup brown sugar
1 egg
1 2/3 cups plain flour
2 tablespoons cocoa powder
1/2 teaspoon bicarbonate of soda
100g dark chocolate, cut into 1cm pieces
100g white chocolate, cut into 1cm pieces

Method
1. Preheat oven to 180°C/160°C fan-forced. Line 3 baking trays with baking paper.
2. Using an electric mixer, beat butter and sugars until light and fluffy. Add egg. Beat to combine. Sift flour, cocoa and bicarbonate of soda over butter mixture. Stir in chocolate.
3. Roll level tablespoons mixture into balls. Place on prepared trays, 5cm apart. Flatten slightly. Bake for 12 to 15 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool completely. Serve.

Notes

Creaming: Beating butter and sugar together (creaming) gives a light texture and greater volume to your baking. Butter should be at room temperature. Beat until pale (around 5 minutes).

Lemon & Herb Chicken Schnitzels

Serve these delicious chicken schnitzels with hot buttery pasta and steamed broccolini for a complete meal.

Ingredients (serves 4)

4 chicken breasts fillets, trimmed

1/3 cup plain flour

2 eggs

2 cups fresh wholemeal breadcrumbs (see note)

1 lemon, rind finely grated

1/2 cup flat-leaf parsley leaves, finely chopped

1/4 cup sage leaves, finely chopped

2 tablespoons butter

extra-light olive oil, for frying

250g dried egg tagliatelle pasta

steamed broccolini and lemon wedges, to serve

Method

1. Preheat oven to 130°C. Place chicken between 2 sheets plastic wrap. Pound with a meat mallet or rolling pin until 4mm thick.

2. Combine flour and salt and pepper on a large plate. Lightly whisk eggs in a shallow dish. Combine breadcrumbs, lemon rind, parsley and sage in a separate shallow dish.

3. Lightly coat chicken in seasoned flour, shaking off excess. Dip in egg then coat in breadcrumb mixture, pressing crumbs on with fingertips to secure.

4. Place 1 tablespoon butter in a large frying pan. Pour oil into pan until 1cm deep. Heat over medium-high heat until hot. Cook schnitzels, in batches, for 2 to 3 minutes each side or until golden. Drain on paper towel. Place on a baking tray in oven to keep warm while cooking remaining schnitzels.

5. Meanwhile, cook pasta in a large saucepan of boiling, salted water until tender. Drain and return to saucepan. Add remaining 1 tablespoon butter and season with salt and pepper. Toss gently to coat. Serve schnitzel with pasta, broccolini and lemon wedges.

Notes

To make 2 cups fresh wholemeal breadcrumbs, place 4 slices wholemeal bread (crusts removed) in a food processor. Process to fine crumbs.

250g baby spinach leaves
600g Red Delight potatoes, peeled, coarsely chopped
80ml (1/3 cup) skim milk, warmed
2 tbs chopped fresh chives
4 (about 150g each) chicken breast fillets
2 roma tomatoes, thinly sliced
100g bocconcini, thinly sliced
Olive oil spray, to grease
Steamed broccolini, to serve

Method

1. Preheat oven to 200°C. Place spinach in a large heatproof bowl and cover with boiling water. Set aside for 30 seconds or until just wilted. Refresh under cold running water. Drain and squeeze out excess liquid.

2. Cook potato in a large saucepan of boiling water for 12-15 minutes or until tender. Drain and return to pan. Use a potato masher to mash until smooth. Gradually add milk and mash until creamy. Stir through chives.

3. Meanwhile, use a small sharp knife to cut a deep horizontal slit into the side of each chicken breast to create a pocket (don't cut all the way through). Divide tomato, bocconcini and spinach among pockets. Secure with toothpicks.

4. Heat a non-stick frying pan over high heat. Spray with oil. Cook chicken for 2 minutes each side or until lightly browned. Transfer to a baking tray. Bake for 10 minutes or until cooked through. Cover with foil and set aside for 5 minutes to rest.

5. Remove toothpicks from chicken and serve with potato and broccolini.

450g (3 cups) self-raising flour
1 tbs caster sugar

50g chilled butter, chopped
1 egg
310ml (1 1/4 cups) buttermilk
115g (1/3 cup) no-added-sugar fruit spread
70g (1/2 cup) chopped pecans

Method
1. Preheat oven to 180°C. Line eight 200ml-capacity muffin pans with paper cases. Combine the flour, sugar and baking powder in a large bowl. Add the butter. User your fingertips to rub the butter into the flour mixture until the mixture resembles coarse breadcrumbs. Make a well in the centre.

2. Whisk the egg and buttermilk in a jug. Pour into the well and use a flat-bladed knife to mix until the dough just comes together. Turn onto a lightly floured surface and bring the dough together into a ball.
3. Roll out dough to a 26 x 30cm rectangle. Spread with fruit spread and sprinkle with pecans. Starting from the long side closest to you, roll up to form a log. Cut into 8 slices. Place a slice, cut-side up, in each lined pan. Bake for 25 minutes or until puffed and pale golden. Set aside to cool.

Preparation Time 30 minutes

Ingredients (serves 6)
300g (2 cups) plain flour
45g (1/4 cup) icing sugar mixture
150g chilled butter, chopped
1 egg yolk
2 tbs water
1 x 240g pkt Cadbury Dream white chocolate, coarsely chopped
200g fresh ricotta
1 x 250g ctn mascarpone

Cherries in red wine syrup
125ml (1/2 cup) light red wine (such as pinot noir)
100g (1/2 cup) caster sugar
550g fresh cherries, pitted

Method
1. Place flour, icing sugar and butter in the bowl of a food processor and process until it resembles fine breadcrumbs. Add the egg yolk and water and process until dough just starts to come together.
2. Turn the dough onto a lightly floured surface and knead until smooth. Shape into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
3. Preheat oven to 200°C. Divide pastry into 6 even portions. Roll out 1 portion between 2 sheets of non-stick baking paper to a 4mm-thick disc. Line a round 3cm-deep, 8cm (base measurement) fluted tart tin, with removable base, with pastry and trim excess. Repeat with remaining pastry. Use a fork to prick the bases all over. Place on a baking tray in the fridge for 30 minutes to rest. Bake for 20-25 minutes or until golden.
4. Meanwhile, to make the cherries in red wine syrup, place the wine and sugar in a saucepan over low heat. Cook, stirring, for 5 minutes or until the sugar dissolves. Bring to the boil. Add cherries and boil, stirring, for 3-4 minutes or until syrup thickens. Set aside for 20 minutes to cool.
5. Place the chocolate in a heatproof bowl over a saucepan of simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir until the chocolate melts and is smooth. Set aside for 10 minutes to cool. Use an electric beater to beat the chocolate, ricotta and mascarpone in a bowl until smooth. Divide the ricotta mixture among the pastry cases and place in the fridge for 30 minutes to chill.
6. Divide tarts among serving plates. Top with the cherries and syrup to serve.

Notes
The syrupy cherries are only half the prize - just wait until you try the white choc filling! Prep: 30 mins (+ 1 hour resting, 10 mins cooling & 30 mins chilling time).

Country Chicken Pie

It's famous for being footy-game fare, but with a little know-how you can turn this classic chicken pie into a family favourite.

Preparation Time 15 minutes
Cooking Time 60 minutes

Ingredients (serves 4)
1 tbs olive oil
6 (about 600g) chicken thigh fillets, cut into 2cm pieces
1 leek, white part only, sliced
1 carrot, peeled, sliced
1 celery stick, sliced
1 red capsicum, halved, seeded, coarsely chopped
2 tbs plain flour
1 cup (250ml) chicken stock
1/2 cup (70g) frozen corn kernels
1/2 cup (80g) frozen peas
1/4 cup (60ml) thickened cream
1 sheet (25cm) ready-rolled shortcrust pastry
1 sheet (25cm) ready-rolled puff pastry
1 egg, lightly whisked

Method
1. Heat half the oil in a frying pan over high heat. Add 1/3 of the chicken and cook, turning occasionally, for 2 minutes or until brown all over. Transfer to a bowl. Repeat in 2 more batches with remaining chicken.
2. Heat the remaining oil in the pan over medium heat. Add the leek, carrot, celery and capsicum and cook, stirring, for 5 minutes or until leek softens. Add the flour and stir for 1 minute or until well combined. Add the chicken and stock and bring to the boil. Reduce heat to low and cook, stirring occasionally, for 15 minutes or until chicken is cooked through and sauce thickens. Add the corn, peas and cream and stir to combine. Remove from heat. Season with salt and pepper.
3. Preheat oven to 220°C. Line the base and side of a 20cm diameter (base measurement) pie dish with the shortcrust pastry. Trim the edge. Line with baking paper and fill with rice or dried beans. Bake for 10 minutes. Remove the paper, rice or dried beans and bake for a further 8 minutes, or until pastry is lightly golden. Remove from oven.
4. Spoon the chicken mixture into the pie shell. Place the puff pastry over the top to enclose the filling. Use a small, sharp knife to trim the edge. Lightly brush with egg. Bake in oven for 15 minutes or until pastry is puffed and golden. Remove from oven and serve immediately.

Macaroni Carbonara

For a quick and easy delicious Monday night dinner try this mouth-watering traditional carbonara pasta with crispy pancetta.

Ingredients (serves 4)
500g dried macaroni pasta
30g butter
100g pancetta (see note), roughly chopped
2 garlic cloves, crushed
4 eggs, lightly beaten
100g parmesan cheese, grated

Method
1. Bring a large saucepan of salted water to the boil over high heat. Add pasta and cook, following packet directions, until tender.
2. Meanwhile, melt butter in a large, non-stick frying pan over medium heat. Add pancetta and garlic. Cook, stirring, for 3 to 4 minutes or until pancetta is crisp.
3. Drain pasta and return to saucepan. Add egg, pancetta mixture, three quarters of the parmesan and salt and pepper. Toss over low heat until well combined. Spoon pasta into bowls. Top with remaining parmesan and serve.

Notes
You can buy pancetta from the supermarket deli. Bacon is also suitable.

Potato & Caramelised Onion Frittata

Ingredients (serves 4)
40g butter
4 brown onions, thickly sliced
2 garlic cloves, crushed
1 1/2 tbs brown sugar
1 tbs balsamic vinegar
1 tbs thyme leaves
2 tbs extra virgin olive oil
3 (about 500g) desiree potatoes, thinly sliced
6 free-range eggs, lightly whisked
1/2 cup (125ml) thickened cream
Thyme sprigs, to serve

Method
1. Heat the butter in a large frying pan over medium heat until foaming. Add the onion and garlic and reduce heat to medium-low. Cook, stirring occasionally, for 15 minutes or until onion is very soft and beginning to caramelise. Add the sugar, vinegar and thyme and cook, stirring, for 5 minutes or until sugar dissolves and mixture thickens. Remove from heat. Season with salt and pepper. Transfer to a bowl.

2. Add half the oil to the pan and place over medium-high heat. Add half the potato and cook, turning occasionally, for 5 minutes or until lightly golden and tender. Transfer to a plate. Repeat with remaining potato.

3. Preheat the grill on high. Heat the remaining oil in a small (15cm base measurement) frying pan over medium heat. Layer the potato and half the onion in the pan. Whisk the egg and cream together in a medium bowl. Season with salt and pepper. Pour over the potato mixture. Reduce heat to low. Cook for 5 minutes or until the frittata is golden and set underneath. Remove from heat and place under the grill. Cook for 3-4 minutes or until golden brown and just set. Remove from heat and set aside for 5 minutes. Turn onto a clean work surface.

4. Cut the frittata into wedges. Serve warm or at room temperature with remaining caramelised onions and thyme sprigs.

Shrug off the chill and lift your spirits with the beauty of winter’s most delicate flowers. It is not like spring, when plants awaken and explode into a kaleidoscope of colours, nor is it like summer, when each bloom tries to outdo the other. Winter is slower, gentler, but equally as precious as seasons go, full of magical surprises and fragrance.

Lavender
Lavenders thrive in well-drained parts of the garden, and only require minimal watering. Lavenders cope well in exposed, sunny, open positions, and grow to one-metre, bun-shaped balls. They flower prolifically in winter and they respond well to pruning. Conduct two good prunings a year, after flowering, to cut back, followed by a fertiliser, such as blood and bone, to encourage quick re-growth.

Winter rose

The winter rose is actually not a rose at all, but a low ground cover with shy, nodding flowers. They are perfect to pick, good to float in bowls and last forever. Hellebores are easy to grow and not demanding, plant them in soil enriched with compost or manure and give them light-dappled shade. They’re perfect beneath deciduous trees such as magnolias, crepe myrtles and maples, where winter sunshine will encourage more flowers and the summer canopy will protect them from too much heat.

Fairy primrose

Primrose is lovely in winter growing 30cm-high in clusters of soft, lacy flowers in white, pink, lavender and magenta. Lasting one season, from winter to spring.

Paper daisy

Another winter-flowering native which boasts thousands of starry-white flowers is the Rhodanthe paper star, a more compact form of the species. It loves well-drained soils and spilling over walls and covering the ground. Admired for its blue-grey foliage, papery-white flower petals and yellow centres, it may grow to 50cm.

Daphne

Give it a spot with morning sun and protection from cold winds. Sweet Daphne odora has clusters of small, starry, pale-pink flowers in winter. If you plant it in filtered sunshine, and moist, cool, humus-rich soil that is well drained and slightly acid, your daphne should last 10 years.

Hardenbergia

Hardenbergia is winter’s favourite flowering native climber with royal-purple sprays of pea-shaped. It needs well-drained soil and semi shade – grow it along the ground, up fences, over an arbour, or entwined into other shrubs.

Ingredients (makes 6)
3 Granny Smith apples
1/2 cup caster sugar, plus extra to sprinkle
300g frozen mixed berries
1 tbsp cornflour
1 tbsp rosewater

2 tbsp milk
Icing sugar, to dust
Vanilla ice cream, to serve

Pastry
1 2/3 cups plain flour
1/3 cup caster sugar
150g unsalted butter, chopped, chilled
1 egg yolk

Method
1. Peel and core apples, then cut into 1cm cubes. Place sugar and a cup of water in a saucepan. Cover and cook on low heat for 5 minutes, or until the apple begins to soften. Add berries and cook, uncovered, for a further 2-3 minutes, until the berries start to release juices. Stir the cornflour with the rosewater and 2 tablespoons cold water until smooth. Add the cornflour mixture to the berries and cook, stirring, for a further minute until thickened. Cool completely.

2. To make the pastry, place the flour and sugar in the bowl of a food processor. Add the butter and a pinch of salt and process until fine crumbs form. Add the egg yolk and 2 tablespoons chilled water and process until the mixture comes together.

3. Turn out on to a work surface and shape into a smooth ball. Enclose in plastic wrap and chill in the fridge for 30 minutes.

4. Preheat the oven to 190°C. Grease 6 holes of a Texas (185ml) muffin pan. Roll out the pastry on a lightly-floured surface to 2-3mm thick. Use a 12cm pastry cutter to cut 6 rounds, then use to line the muffin holes. Divide the berry mixture among the holes. Bring the remaining pastry into a ball and roll out to 2-3mm thick.

5. Use a 9cm pastry cutter to cut out 6 rounds. Brush the pastry edges with water and top with the smaller rounds, then press edges together to seal. Brush the tops with milk and sprinkle with extra caster sugar. Bake for 30 minutes or until golden. Remove from oven and leave in pan for 10 minutes before turning out. Dust with icing sugar and serve with vanilla ice cream.
